Paksiw ( Tagalog: [ˈpak.sɪʊ] ) minangka gaya masak Filipina, sing jenenge "masak lan rebus ing cuka." Masakan umum sing duwe istilah kasebut bisa beda-beda gumantung apa sing wis dimasak.

Pinangat na iwak kadhang kala uga diarani paksiw, sanajan kalebu panganan sing beda nanging ana gandhengane sing nggunakake woh-wohan asem kaya calamansi, kamias ( bilimbi ) utawa sampalok ( asam ) kanggo nguntungke duduh kaldu lan dudu cuka.
